Xylitol is highly processed and made with acids and metals and ethanol. there's no way it's even remotely paleo. doesn't mean you can't use it, just realize it isn't paleo.. Xylitol (72% carbs, paleo sweetener, but not recommended) this natural granulated sweetener is made from fermented whole plant pulp. since you can ferment it yourself with the starter yeast pichia stipitis , i consider it a paleo sweetener.. It turns out that making a paleo pumpkin bread recipe the way i want it isn’t as popular as i’d expected. i used xylitol. the batter wasn’t thick unlike my traditional (non-keto) recipe so the peaks burnt as they baked but my house smelt delicious. i was disappointed with the texture of the final product..
